Dive into the art of classic French baking by mastering homemade puff pastry. This versatile dough, with its delicate, flaky layers, serves as a cornerstone for countless exquisite recipes. From creating the perfect base for savory quiches to adding a touch of elegance to sweet pastries, the ability to craft your own puff pastry from scratch will elevate your baking skills and impress anyone who tastes your creations. Follow this step-by-step guide to achieve buttery, airy perfection.
Ingredients:
320 grams all-purpose flour
1 teaspoon salt
226 grams unsalted butter, cold, cut into small cubes
120 ml ice-cold water
Instructions:
Prepare Flour Mixture: In a large mixing bowl, combine the flour and salt. Add the cubed butter to the flour, tossing lightly to coat the butter pieces.
Add Water: Drizzle the ice-cold water over the flour and butter mixture, mixing gently with a spatula or a fork until the dough just begins to come together.
Form Dough: Turn the dough out onto a lightly floured surface and shape it into a rough rectangle. Do not over-knead; the butter should remain in visible chunks.
Roll and Fold: Roll the dough into a rectangle about 1.3 cm thick. Fold it in three, like a letter. Turn the dough 90 degrees and repeat the rolling and folding process. Wrap in plastic wrap and chill for at least 1 hour.
Repeat: Repeat the rolling and folding process three more times, chilling for at least 1 hour between each set.
Final Chill: After the final fold, wrap the dough in plastic wrap and chill for at least one hour before using.
Chef Brooke Silk’s Notes:
Butter Temperature: It’s crucial to keep the butter cold throughout the process; this ensures the dough layers puff up properly when baked.
Chilling: Do not skip the chilling steps; they are essential for developing the flaky layers.
Usage: Puff pastry can be used for both sweet and savory recipes, from pastries to turnovers and tarts.
Storage: The puff pastry can be frozen for up to a month; wrap it tightly in plastic and then place it in a zip lock bag.
